Beluga Caviar

This is the largest of the species of sturgeon in the Caspian Sea. The Beluga grow up to about 2,000 pounds and yield the largest "berries". Beluga do not begin to bear eggs until they are about 20 years old. For this reason, and because it has the mildest flavor, Beluga is the most highly prized of all caviar.
