This is the second-largest species of Caspian Sea Sturgeon, weighing up to about 600 pounds, and it produces slightly smaller caviar berries than Beluga Sturgeon. The color of Osetra eggs ranges from golden yellow to brown and the flavor is more intense than Beluga. |
