 Osetra Caviar This is the second-largest species of Caspian Sea sturgeon, weighing up to about 600 pounds, and it produces slightly smaller caviar berries than Beluga sturgeon; Osetra begin to bear eggs when they are about 12 to 15 years old. The color of Osetra eggs ranges from golden yellow to brown and the flavor is more intense than Beluga.
