To make prosciutto is a painstaking process, involving 10 months and as many different curing rooms, with every step carefully monitored by expert curers. We begin by selecting the finest hams. After a period of natural cooling, the hams are rubbed with salt (and a pinch of pepper) and begin the curing process in a succession of cold rooms.
