This fish, which grows to weigh about 80 pounds, is the smallest and most abundant of all the Caspian Sea sturgeon. The eggs are also the smallest of the three main species and taste the strongest; the Sevruga begin to bear eggs when they are about 7 years old. The color of the eggs is usually dark gray to black.
